Can one gateway collect level, flow, pressure and pump status?

Often yes, when the selected gateway has the required serial, analog and digital interfaces. Send the point list so the I/O count and polling method can be checked.

Do we need a new dashboard?

Not necessarily. Data can be prepared for an existing SCADA, MQTT broker or customer platform when the endpoint and payload requirements are provided.

Can this work at a site without mains power?

A battery or solar path can be evaluated from the sensor load, reporting interval, radio duty cycle, autonomy target and local solar conditions.
